Preparation Steps
- In a large pot, mix the sweet potatoes, 1½ cups of apple cider, kosher salt, and the cinnamon stick. Add enough water to cover the potatoes completely.
- Bring the mixture to a boil and then reduce to a simmer. Let it cook for 20-30 minutes, or until the sweet potatoes are very tender when pierced with a fork.
- Once the potatoes are tender, drain them well and return them to the pot. Don’t forget to discard the cinnamon stick at this point!
- Add the remaining ½ cup apple cider, butter, sour cream, and a pinch of salt to the potatoes. Mash everything together until creamy and smooth, ensuring there are no lumps.
- Taste your mashed potatoes and season with additional salt and freshly ground black pepper as desired.
- Transfer the luscious mashed sweet potatoes to a serving bowl. Top with crispy onion strings and fresh parsley for a beautiful presentation. Enjoy this heartwarming dish warm.
