Preparation Steps
  1. In a large pot, mix the sweet potatoes, 1½ cups of apple cider, kosher salt, and the cinnamon stick. Add enough water to cover the potatoes completely.
  2. Bring the mixture to a boil and then reduce to a simmer. Let it cook for 20-30 minutes, or until the sweet potatoes are very tender when pierced with a fork.
  3. Once the potatoes are tender, drain them well and return them to the pot. Don’t forget to discard the cinnamon stick at this point!
  4. Add the remaining ½ cup apple cider, butter, sour cream, and a pinch of salt to the potatoes. Mash everything together until creamy and smooth, ensuring there are no lumps.
  5. Taste your mashed potatoes and season with additional salt and freshly ground black pepper as desired.
  6. Transfer the luscious mashed sweet potatoes to a serving bowl. Top with crispy onion strings and fresh parsley for a beautiful presentation. Enjoy this heartwarming dish warm.
