Ingredients
  

For the Chicken
  • 3-4 lbs Organic chicken skin removed
  • 1-2 Tbsps Browning optional
  • 2-3 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 2 tsps On Everything All-Purpose Blend
  • 1 teaspoon Sea salt
  • 1/2 teaspoon Smoked paprika
  • 4 Tbsps Extra virgin olive oil
For the Sauce and Vegetables
  • 2 Tbsps Organic brown sugar
  • 1 can (14 oz) Coconut milk
  • 2 medium Russet potatoes peeled and cubed
  • 2 medium Carrots peeled and chopped
  • 1 medium Bell pepper cored and chopped
  • 3 cloves Garlic minced
  • 2 tsps Fresh ginger minced
  • 1-3 pieces Scotch bonnet peppers adjust to taste
  • 2 pieces Green onions lightly crushed or chopped
  • 2 sprigs Fresh thyme
  • 1 cup Organic chicken stock low-sodium
  • 1 tablespoon Jamaican pepper sauce
  • 1 teaspoon Ground allspice
  • Sea salt + black pepper to taste

Method
 

Cooking Instructions
  1. In a large bowl, toss the organic chicken with browning, Jamaican green seasoning, Jamaican curry powder, On Everything All-Purpose Blend, sea salt, smoked paprika, and olive oil. Ensure each piece is evenly coated for maximum flavor.
  2. Heat a large pot over medium heat and add the seasoned chicken. Cook it until uniformly browned on all sides, about 5-7 minutes.
  3. Stir in organic brown sugar, coconut milk, cubed potatoes, chopped carrots, bell pepper, minced garlic, ginger, scotch bonnet peppers, green onions, fresh thyme, and chicken stock.
  4. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 30-35 minutes, stirring occasionally.
  5. Taste the curry and adjust the seasoning with additional salt and pepper if needed. Serve hot.
