- In a large bowl, toss the organic chicken with browning, Jamaican green seasoning, Jamaican curry powder, On Everything All-Purpose Blend, sea salt, smoked paprika, and olive oil. Ensure each piece is evenly coated for maximum flavor.
- Heat a large pot over medium heat and add the seasoned chicken. Cook it until uniformly browned on all sides, about 5-7 minutes.
- Stir in organic brown sugar, coconut milk, cubed potatoes, chopped carrots, bell pepper, minced garlic, ginger, scotch bonnet peppers, green onions, fresh thyme, and chicken stock.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 30-35 minutes, stirring occasionally.
- Taste the curry and adjust the seasoning with additional salt and pepper if needed. Serve hot.
