Method
 

Preparation

  3. Cook the eggs in a non-stick skillet over medium heat for about 3 minutes until the whites are set but yolks are still runny.
  4. Spread the mashed avocado over one slice of toast, layer with cooked egg and optional toppings.
  5. Top with the second slice of toast, slice in half, and serve immediately.
