Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thickness
  • 8 slices bacon cooked until crispy and chopped
  • 4 oz cream cheese softened at room temperature
  • 1 cup shredded cheddar cheese for stuffing
  • 2 medium jalapenos seeded and finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Topping

  • 1 cup panko breadcrumbs for extra crunch
  • 1/4 cup parmesan cheese grated
  • 2 tbsp olive oil to help brown the topping

Instructions

Prepare the Chicken

  • Preheat your oven to 375°F (190°C). This ensures the chicken cooks evenly and thoroughly.
  • In a mixing bowl, combine the softened cream cheese, chopped jalapenos, cooked bacon, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  • Take each pounded chicken breast and place a generous amount of the cream cheese mixture in the center. Fold the chicken over to enclose the filling, securing it with toothpicks if necessary.

Prepare the Topping

  • In a separate bowl, mix together the panko breadcrumbs, grated parmesan cheese, and olive oil. This mixture will create a crispy topping.

Assemble and Bake

  • Place the stuffed chicken breasts in a greased baking dish. Evenly sprinkle the breadcrumb mixture over the top of each chicken breast.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the topping is golden brown.
  • Remove from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chicken moist.

Notes

Serve with a side salad or roasted vegetables for a complete meal. Adjust the number of jalapenos based on your heat preference.
