Ingredients
  

For the Base
  • 20 oz grape tomatoes these juicy gems burst with sweetness when baked
  • 5 cloves garlic peeled and halved
  • 1/2 cup extra-virgin olive oil for drizzling
  • Salt to taste
  • freshly ground black pepper to taste
For the Pasta
  • 7-8 oz feta cheese drained
  • 10 oz dry pasta such as campanelle, rigatoni, rotini, penne, bow tie, or cavatappi
For the Greens
  • 8 oz spinach roughly chopped
  • 1/4 cup fresh basil thinly sliced
  • 2 Tbsp fresh parsley minced
For the Heat
  • 1/4 tsp crushed red pepper flakes or more to taste
For the Sauce
  • 1/2 cup reserved pasta water

Method
 

Directions
  1. Preheat the oven to 400°F (200°C).
  2. Combine grape tomatoes and garlic in a baking dish, then drizzle with olive oil and season with salt and pepper.
  3. Center the feta cheese in the dish with the tomatoes and garlic.
  4. Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is golden.
  5. Cook the dry pasta according to package instructions until al dente, reserving 1/2 cup of the pasta water before draining.
  6. Remove the baking dish from the oven, then add the cooked pasta, spinach, basil, parsley, and crushed red pepper flakes.
  7. Toss everything together, adding reserved pasta water as needed to create a creamy sauce that coats every bite.
  8. Serve warm, and enjoy the delightful combination of flavors!
