For the Muffins

  • 3 medium ripe bananas mashed
  • 1/3 cup unsalted butter melted and slightly cooled
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips semi-sweet or dark

Instructions

Prepare the Muffin Batter

  • Preheat your oven to 350°F (175°C). This ensures that the muffins bake evenly and rise properly.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. This adds natural sweetness and moisture to the muffins.
  • Add the melted butter to the mashed bananas and mix well. The butter adds richness to the muffins.
  • Stir in the egg and vanilla extract until fully combined. This helps to bind the ingredients together.
  • In a separate bowl, whisk together the flour, sugar, baking soda, and salt. This ensures that the leavening agent is evenly distributed.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently with a rubber spatula until just combined. Be careful not to overmix, as this can make the muffins tough.
  • Fold in the chocolate chips, distributing them evenly throughout the batter.

Bake the Muffins

  • Line a muffin tin with paper liners or grease it lightly with cooking spray. This prevents the muffins from sticking.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This allows room for the muffins to rise.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. This ensures that the muffins are fully cooked.
  • Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a cooling rack. This helps them set and makes them easier to remove.

Notes

For best results, use very ripe bananas as they are sweeter and provide more moisture. You can also add nuts or substitute some of the flour with whole wheat flour for a healthier option.
