  • 2 tablespoons Canola oil for searing the beef
  • 2 large Carrots chopped
  • 1 large Yellow onion diced
  • 2 stalks Celery sliced
  • 3 cloves Garlic minced
Soup Additions
  • 6 cups Chicken stock flavorful liquid base
  • 1 cup Pearled barley soaks up flavors
  • 1 tablespoon Asian fish sauce optional for umami flavor
Seasoning and Garnish
  • 1 teaspoon Kosher salt adjust to taste
  • 1 teaspoon Freshly ground black pepper to taste
  • 1/4 cup Minced fresh parsley for garnish
  • 1 pound Bone-in beef short ribs optional for added richness

Method
 

How to Make Beef Barley Soup
  1. Season the beef with kosher salt and black pepper for flavor.
  2. Sear the beef in heated canola oil until browned on all sides.
  3. Cook the carrots, onion, celery, and garlic until lightly browned.
  4. Add chicken stock and scrape the bottom of the pot for flavor.
  5. Combine seared beef and bring to a simmer, cook for 1-2 hours.
  6. Stir in pearled barley and cook for 30 minutes until tender.
  7. Serve garnished with minced parsley.
