  • 1/2 cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1/2 cup Buttermilk Substitutable with milk plus vinegar
  • 1/3 cup Vegetable oil
  • 1 teaspoon Vanilla extract
Cream Cheese Filling
  • 8 ounces Cream cheese softened
  • 1/2 cup Mini chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. Whisk together the flour, cocoa powder, baking soda, and granulated sugar in a large bowl.
  3. Mix the eggs, buttermilk, vegetable oil, and vanilla extract in a separate bowl until smooth.
  4. Combine the wet and dry ingredients gently, stirring until just mixed.
  5. Beat the softened cream cheese with a bit of sugar in another bowl until smooth.
  6. Fill each cupcake liner with two tablespoons of batter, add a spoonful of cream cheese mixture, then top with another tablespoon of batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean from the center.
