How to Make Blueberry Cottage Cheese Muffins
  1. Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners.
  2. Whisk together the all-purpose flour, granulated sugar, baking powder, and a pinch of salt in a large bowl.
  3. Mix the cottage cheese, large eggs, milk, and vanilla extract in another bowl until smooth.
  4. Combine the wet and dry ingredients gently, then fold in the fresh blueberries.
  5. Spoon the batter into the muffin cups, filling them about three-quarters full.
  6. Bake the muffins for 18-20 minutes or until golden brown. A toothpick should come out clean.
