Ingredients

For the Blueberry Filling

  • 2 cups fresh blueberries washed and stems removed
  • 1 tablespoon granulated sugar adjust based on sweetness preference
  • 1 tablespoon cornstarch for thickening
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon vanilla extract optional for flavor

For the Crisp Topping

  • 1 cup old-fashioned oats not instant
  • 1/2 cup all-purpose flour sifted
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 cup sliced almonds optional for added crunch
  • 1/2 teaspoon cinnamon for flavor
  • 1/4 teaspoon salt to balance sweetness

Instructions

Prepare the Blueberry Filling

  • Preheat your oven to 350°F (175°C). This ensures that the crisp cooks evenly.
  • In a mixing bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss the mixture until the blueberries are evenly coated. This will help to thicken the juices as they cook.
  • Transfer the blueberry mixture into a 9-inch baking dish, spreading it out evenly.

Make the Crisp Topping

  • In a separate bowl, combine the old-fashioned oats, all-purpose flour, brown sugar, melted butter, sliced almonds, cinnamon, and salt. Mix well until all ingredients are combined and crumbly.
  • Sprinkle the oat mixture evenly over the blueberry filling in the baking dish. This creates a crunchy topping that contrasts nicely with the soft blueberries.

Bake the Crisp

  • Place the baking dish in the preheated oven and bake for 30 minutes, or until the topping is golden brown and the blueberries are bubbling. This allows the flavors to meld together and the topping to crisp up.
  • Remove from the oven and let cool for about 10 minutes before serving. This will help the juices thicken slightly.

Serve

  • Serve warm, optionally with a scoop of vanilla ice cream or whipped cream on top for extra indulgence.

Notes

For best results, use fresh blueberries. If using frozen, do not thaw them before mixing with the other ingredients to prevent excess moisture.
