Method
 

Preparation
  1. In a skillet over medium heat, cook the bacon or sausage until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels to absorb excess grease.
  2. In the same skillet, toast the English muffin halves until golden brown, about 2-3 minutes per side.
  3. In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the mixture into a non-stick skillet over low heat, stirring gently until soft and fluffy, 4-5 minutes.
  4. Layer the cooked meat, fluffy scrambled eggs, cheese, and optional avocado on one half of each muffin. Top with the other half.
  5. Place the assembled sandwiches back in the skillet for about one minute on each side, until the cheese melts.
  6. Serve the sandwiches warm, garnished with optional toppings like chives or alongside fresh fruit.
