Ingredients

  • 6 large eggs room temperature
  • 1/2 cup milk whole or 2% milk
  • 1 cup fresh spinach chopped
  • 1 cup shredded cheese cheddar or your choice
  • 1/4 cup red bell pepper finely diced
  • 1/4 cup green onion sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Prepare the Oven and Muffin Tin

  • Preheat your oven to 350°F (175°C). This ensures that the egg bites cook evenly and thoroughly.
  • Grease a muffin tin with cooking spray or oil to prevent sticking. You can also use silicone muffin cups for easy removal.

Blend the Egg Mixture

  • In a blender, combine the eggs and milk. Blend on medium speed until well combined and slightly frothy. This aerates the mixture, making the egg bites fluffy.

Mix in the Vegetables and Seasoning

  • In a mixing bowl, combine the chopped spinach, shredded cheese, diced red bell pepper, sliced green onion, salt, and black pepper. Stir until evenly mixed.
  • Pour the blended egg mixture over the vegetable mixture. Gently stir to combine everything without overmixing.

Fill the Muffin Tin

  • Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This allows room for the egg bites to rise.

Bake the Egg Bites

  • Bake in the preheated oven for 20-25 minutes, or until the egg bites are set in the center and lightly golden on top. To check for doneness, insert a toothpick into the center; it should come out clean.

Cool and Serve

  • Remove the muffin tin from the oven and let it cool for 5 minutes. Then, carefully run a knife around the edges to loosen the egg bites.
  • Gently pop the egg bites out of the muffin tin and serve warm, or let them cool completely before storing in an airtight container.

Notes

These egg bites can be stored in the refrigerator for up to 5 days. They can also be frozen for up to 2 months. To reheat, microwave for 30-60 seconds or until warmed through.
