Ingredients

For the Chicken Filling

  • 2 cups cooked chicken breast shredded or diced
  • 4 slices bacon cooked and crumbled
  • 1/2 cup ranch dressing store-bought or homemade
  • 1 cup shredded cheddar cheese or a cheese blend
  • 1 cup shredded mozzarella cheese for extra cheesiness

For the Quesadilla

  • 4 large flour tortillas 10-inch size recommended
  • 2 tablespoons olive oil for frying
  • 1/2 teaspoon garlic powder optional, for extra flavor
  • 1/2 teaspoon onion powder optional, for extra flavor

For Serving

  • 1/4 cup sour cream optional, for dipping
  • 1/4 cup salsa optional, for dipping

Instructions

Prepare the Filling

  • In a large bowl, combine the shredded chicken, crumbled bacon, ranch dressing, cheddar cheese, and mozzarella cheese. Mix well until all ingredients are evenly coated with ranch dressing.

Assemble the Quesadillas

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. While the oil is heating, place one tortilla on a clean surface.
  • Spread a generous portion of the chicken filling over half of the tortilla, leaving a small border around the edges.
  • Fold the tortilla in half to cover the filling. Press down gently to seal.
  • Repeat the process with the remaining tortillas and filling.

Cook the Quesadillas

  • In the same skillet, add another tablespoon of olive oil. Once hot, carefully place the folded quesadilla in the skillet.
  • Cook for 3-4 minutes on one side, or until golden brown and crispy. Use a spatula to flip the quesadilla and cook for an additional 3-4 minutes on the other side.
  • Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.

Serve

  • Serve the quesadillas warm with sour cream and salsa on the side for dipping.

Notes

For a spicier kick, consider adding jalapeños or hot sauce to the filling. You can also customize the cheese blend to your preference.
