Ingredients

For the Chicken Filling

  • 2 cups cooked chicken breast, shredded Use rotisserie chicken for convenience.
  • 4 slices bacon Cooked until crispy and chopped.
  • 1/2 cup ranch dressing Use your favorite brand or homemade.
  • 1 cup shredded cheddar cheese For a sharper flavor, use sharp cheddar.
  • 1 cup shredded mozzarella cheese Provides great melting texture.

For the Quesadilla

  • 4 large flour tortillas 10-inch size works best.
  • 2 tablespoons olive oil For cooking the quesadillas.

Instructions

Prepare the Chicken Filling

  • In a mixing bowl, combine the shredded chicken, chopped bacon, and ranch dressing. Mix well until the chicken and bacon are evenly coated with the dressing. This adds flavor and moisture to the filling.
  • Add the shredded cheddar and mozzarella cheese to the mixture and stir until combined. The cheese will help bind the filling together and provide a creamy texture.

Assemble the Quesadilla

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. This will help crisp the tortillas.
  • Place one tortilla in the skillet and spread half of the chicken filling evenly over the tortilla. Ensure the filling is spread out to the edges for even cooking.
  • Top with another tortilla and cook for about 3-4 minutes, or until the bottom tortilla is golden brown and crispy. Use a spatula to gently lift the edge to check for browning.
  • Carefully flip the quesadilla using the spatula and add the remaining tablespoon of olive oil to the skillet if needed. Cook the other side for another 3-4 minutes until golden brown and the cheese is melted.

Serve

  • Remove the quesadilla from the skillet and let it rest for a minute. This allows the cheese to set slightly, making it easier to cut.
  • Cut the quesadilla into wedges using a sharp knife or pizza cutter. Serve warm with extra ranch dressing on the side for dipping.

Notes

Feel free to customize the filling with additional ingredients like diced bell peppers or jalapeños for extra flavor. You can also use whole wheat tortillas for a healthier option.
