Ingredients

For the Chicken

  • 2 pieces boneless, skinless chicken breasts pounded to even thickness for even cooking
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to season chicken
  • 1/2 teaspoon black pepper to season chicken

For the Salad

  • 1 head romaine lettuce washed and chopped into bite-sized pieces
  • 1 cup croutons store-bought or homemade
  • 1/2 cup Parmesan cheese freshly grated for best flavor

For the Caesar Dressing

  • 1 clove garlic minced
  • 2 anchovy fillets optional for authentic flavor
  • 1 teaspoon Dijon mustard for tanginess
  • 2 tablespoons lemon juice freshly squeezed
  • 1/2 cup mayonnaise for creaminess
  • 1/4 cup olive oil for richness
  • 1/4 teaspoon Worcestershire sauce for depth of flavor
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions

Prepare the Chicken

  • Preheat your grill or grill pan over medium-high heat. This ensures a nice sear on the chicken.
  • Rub the chicken breasts with olive oil, salt, and black pepper on both sides. This will enhance the flavor and keep the chicken moist.
  • Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked.
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing. Resting allows the juices to redistribute, keeping the chicken tender.

Make the Caesar Dressing

  • In a mixing bowl, combine minced garlic, anchovy fillets (if using), Dijon mustard, and lemon juice. Whisk together until well combined.
  • Add mayonnaise and olive oil to the mixture. Whisk until smooth and creamy. This forms the base of your dressing.
  • Stir in Worcestershire sauce, salt, and black pepper to taste. Adjust seasoning as needed.

Assemble the Salad

  • In a large salad bowl, add the chopped romaine lettuce.
  • Slice the grilled chicken into strips and place on top of the lettuce.
  • Drizzle the Caesar dressing over the salad and toss gently to coat all ingredients evenly.
  • Top with croutons and freshly grated Parmesan cheese.
  • Serve immediately for the best texture and flavor.

Notes

For a lighter version, you can substitute Greek yogurt for half of the mayonnaise in the dressing. Feel free to add other toppings like cherry tomatoes or avocado for extra flavor.
