  • 1 lb Boneless, skinless chicken breasts diced
  • 3 cloves Fresh garlic minced
  • 2 medium Medium carrots diced
  • 1 cup Frozen peas
  • 2 medium Yukon Gold potatoes diced
  • 2 cups Low-sodium chicken broth
  • 1/2 cup Heavy cream
  • 1 teaspoon Dried thyme
  • to taste Salt
  • to taste Pepper
Crust
  • 1 package Pie crust store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 400°F and lightly spray a baking dish with nonstick cooking spray.
  2. Cook the diced chicken in a large skillet over medium heat for about 8-10 minutes until golden brown, seasoning with salt and pepper.
  3. Sauté the minced garlic and diced carrots in the skillet for about five minutes.
  4. Combine the chicken broth and heavy cream in the skillet, stir in the dried thyme, and allow to simmer for five minutes until it thickens.
  5. Transfer the chicken mixture into your prepared baking dish, layering the diced potatoes and frozen peas on top.
  6. Cover with the pie crust, trim any excess, and cut slits for ventilation. Bake for 30-35 minutes until golden brown.
