Preparation
- Preheat the oven to 350°F (175°C).
- Mix the chocolate graham cracker crumbs with melted butter in a bowl, then press firmly into the bottom of a springform pan.
- Beat the softened cream cheese until whipped, then gradually add sugar and vanilla extract until well combined.
- Add heavy cream and beat until stiff peaks form, then gently fold in the chopped strawberries.
- Pour cream cheese mixture over the cooled crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight.
- Melt the chocolate chips and drizzle over the chilled cheesecake before serving. Garnish with extra fresh strawberries.
