Crust
  • 2 cups chocolate graham cracker crumbs
  • 1/2 cup unsalted butter, melted
Filling
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 cups fresh strawberries, chopped
Drizzle
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Mix the chocolate graham cracker crumbs with melted butter in a bowl, then press firmly into the bottom of a springform pan.
  3. Beat the softened cream cheese until whipped, then gradually add sugar and vanilla extract until well combined.
  4. Add heavy cream and beat until stiff peaks form, then gently fold in the chopped strawberries.
  5. Pour cream cheese mixture over the cooled crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight.
  6. Melt the chocolate chips and drizzle over the chilled cheesecake before serving. Garnish with extra fresh strawberries.
