  • 2 cups chocolate graham cracker crumbs
  • 1/2 cup unsalted butter melted
For the Filling
  • 16 oz cream cheese softened
  • 3/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh strawberries chopped
For the Drizzle
  • 1 cup chocolate chips melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Mix chocolate graham cracker crumbs with melted butter in a bowl. Press firmly into the bottom of a springform pan.
  3. Beat softened cream cheese in another bowl until smooth. Gradually add sugar and vanilla, mixing until creamy.
  4. Add heavy cream, beating until stiff peaks form. Fold in chopped strawberries.
  5. Pour the cream cheese mixture over the cooled crust and smooth the top.
  6. Cover with plastic wrap and refrigerate for at least four hours, or overnight.
  7. Melt the chocolate chips and drizzle over the cheesecake before serving. Garnish with extra strawberries.
