Steps to Make Cupcakes and Frosting
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, stir together 2 cups of sugar, 1 3/4 cups of flour, 3/4 cup of cocoa, baking powder, baking soda, and salt.
  3. Mix in the eggs, 1 cup of whole milk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract.
  4. Carefully stir in 1 cup of boiling water.
  5. Pour the batter into the cupcake liners, filling them about 2/3 full.
  6. Bake in the preheated oven for approximately 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, transfer the cupcakes to a wire rack to cool completely before frosting.
  8. In a large mixing bowl, beat 1/2 cup of softened unsalted butter until smooth.
  9. Add 8 oz of softened cream cheese and mix until fully combined and smooth.
  10. Mix in 1/2 cup of unsweetened cocoa until just blended.
  11. Pour in 4 cups of powdered sugar and 1 teaspoon of vanilla extract.
  12. Slowly mix in 1 to 4 tablespoons of heavy cream until you reach your desired frosting consistency.
