How to Make Cinnamon Apple Fritters
  1. In a large bowl, mix together the self-raising flour, bicarbonate of soda, chilled soda water, caster sugar, and ground cinnamon until smooth.
  2. Dice the peeled and cored Pink Lady apples into small pieces and fold them into the batter.
  3. In a frying pan, heat vegetable oil over medium heat until hot.
  4. Drop dollops of the batter mixed with apple pieces into the hot oil and fry for about 3-4 minutes on each side.
  5. Remove the fritters from the oil and place them on paper towels to drain excess oil.
  6. Plate the fritters warm, add scoops of vanilla ice cream on the side, and drizzle with golden syrup.
