Preparation
- Preheat your oven to 450°F. Spray a cast-iron skillet or a large round baking pan with baking spray.
- Grate the cold butter onto parchment paper and freeze for about 5 minutes.
- Mix brown sugar and cinnamon in a small bowl for the topping.
- Sprinkle 1 tablespoon of the cinnamon sugar mixture into the bottom of the prepared pan.
- Whisk flour, granulated sugar, baking soda, and baking powder in a large bowl.
- Incorporate the grated butter into the dry ingredients using a fork.
- Pour in the buttermilk and stir until mostly combined, then fold the dough until it's sticky.
- Fold in the blueberries gently.
- Divide dough into 7 equal portions and shape into rough balls.
- Arrange 6 balls in the pan, leaving space for the last ball.
- Brush the tops with heavy cream and sprinkle with the remaining cinnamon sugar mix.
- Bake for 22-27 minutes until golden brown.
- Brush with melted butter after removing from the oven.
- Serve warm and enjoy!
