Biscuit Dough
  • cup light brown sugar packed
  • 1 teaspoon cinnamon
  • 1 cup salted butter grated, cold
  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon baking soda
  • 2 tablespoons baking powder
  • 2 cups buttermilk

  • 1 cup blueberries fresh or frozen
Topping
  • 3 tablespoons heavy cream
  • 2 tablespoons unsalted butter melted

Method
 

Preparation
  1. Preheat your oven to 450°F. Spray a cast-iron skillet or a large round baking pan with baking spray.
  2. Grate the cold butter onto parchment paper and freeze for about 5 minutes.
  3. Mix brown sugar and cinnamon in a small bowl for the topping.
  4. Sprinkle 1 tablespoon of the cinnamon sugar mixture into the bottom of the prepared pan.
  5. Whisk flour, granulated sugar, baking soda, and baking powder in a large bowl.
  6. Incorporate the grated butter into the dry ingredients using a fork.
  7. Pour in the buttermilk and stir until mostly combined, then fold the dough until it's sticky.
  8. Fold in the blueberries gently.
  9. Divide dough into 7 equal portions and shape into rough balls.
  10. Arrange 6 balls in the pan, leaving space for the last ball.
  11. Brush the tops with heavy cream and sprinkle with the remaining cinnamon sugar mix.
  12. Bake for 22-27 minutes until golden brown.
  13. Brush with melted butter after removing from the oven.
  14. Serve warm and enjoy!
