Ingredients
  

Biscuit Dough
  • cup light brown sugar packed
  • 1 teaspoon cinnamon
  • 1 cup salted butter grated, cold
  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon baking soda
  • 2 tablespoons baking powder
  • 2 cups buttermilk
Add-ins
  • 1 cup blueberries fresh or frozen
Topping
  • 3 tablespoons heavy cream
  • 2 tablespoons unsalted butter melted

Method
 

Preparation
  1. Preheat your oven to 450°F. Spray a 12-inch cast-iron skillet or a large round baking pan with baking spray.
  2. Grate the cold butter and place it in the freezer for about 5 minutes.
  3. Mix the brown sugar and cinnamon in a small bowl, then sprinkle 1 tablespoon into the bottom of the prepared pan and reserve the rest.
  4. Whisk together the flour, granulated sugar, baking soda, and baking powder in a large bowl.
  5. Incorporate the grated butter into the dry ingredients using a fork.
  6. Pour in the buttermilk and stir until mostly combined. Gently fold the dough until it's sticky with no dry bits remaining.
  7. Fold in the blueberries carefully.
  8. Divide the dough into 7 portions and shape each into a rough ball.
  9. Arrange 6 balls around the edge of the pan and leave space in the center.
  10. Brush the tops with heavy cream and sprinkle with the remaining cinnamon sugar mixture.
  11. Bake for 22-27 minutes until golden brown.
  12. Brush with melted butter after removing from the oven.
  13. Serve warm.
