Instructions
Prepare the Ingredients
If using fresh corn, remove the kernels from the cob using a sharp knife. Hold the cob upright in a bowl to catch any falling kernels.
Finely dice the red bell pepper, red onion, and jalapeño. Make sure to remove the seeds from the jalapeño to control the heat level.
Chop the fresh cilantro, ensuring no large stems are included.
Mix the Salsa
In a large mixing bowl, combine the corn kernels, diced red bell pepper, red onion, chopped cilantro, and jalapeño.
Add the freshly squeezed lime juice, salt, and black pepper to the bowl.
Using a spoon, gently mix all the ingredients together until well combined. Be careful not to mash the corn.
Taste and Adjust
Taste the salsa and adjust the seasoning if necessary. You may want to add more lime juice, salt, or pepper based on your preference.
Serve
