  • 2 cups fresh corn kernels can use canned or frozen if fresh is unavailable
  • 1 medium red bell pepper finely diced
  • 1/2 cup red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 1 medium jalapeño seeded and finely diced
  • 2 tablespoons lime juice freshly squeezed for best flavor
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Instructions

Prepare the Ingredients

  • If using fresh corn, remove the kernels from the cob using a sharp knife. Hold the cob upright in a bowl to catch any falling kernels.
  • Finely dice the red bell pepper, red onion, and jalapeño. Make sure to remove the seeds from the jalapeño to control the heat level.
  • Chop the fresh cilantro, ensuring no large stems are included.

Mix the Salsa

  • In a large mixing bowl, combine the corn kernels, diced red bell pepper, red onion, chopped cilantro, and jalapeño.
  • Add the freshly squeezed lime juice, salt, and black pepper to the bowl.
  • Using a spoon, gently mix all the ingredients together until well combined. Be careful not to mash the corn.

Taste and Adjust

  • Taste the salsa and adjust the seasoning if necessary. You may want to add more lime juice, salt, or pepper based on your preference.

Serve
