- Combine the dry ingredients in a bowl. Mix together the all-purpose flour, baking powder, and a pinch of salt for a flavorful base.
- Stir in the Greek yogurt. Add the Greek yogurt to the dry mixture and mix until a sticky dough forms.
- Knead the dough on a lightly floured surface for about 2–3 minutes until it's smooth and elastic.
- Divide the dough into two equal portions and roll each into ovals approximately 1/4-inch thick.
- Preheat your oven to 450°F (232°C) and prepare a baking sheet by lining it with parchment paper.
- Place the unbaked flatbreads on the prepared baking sheet and bake for 6–8 minutes until they puff and are slightly golden.
- Remove the flatbreads from the oven and generously spread whipped cottage cheese over each one.
- Add a drizzle of olive oil on top and sprinkle the flatbreads with dried herbs or optional spices.
- Put the flatbreads back in the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
- Let the flatbreads cool slightly before slicing. They're best enjoyed warm!
