Method
 

Directions
  1. Combine the dry ingredients in a bowl. Mix together the all-purpose flour, baking powder, and a pinch of salt for a flavorful base.
  2. Stir in the Greek yogurt. Add the Greek yogurt to the dry mixture and mix until a sticky dough forms.
  3. Knead the dough on a lightly floured surface for about 2–3 minutes until it's smooth and elastic.
  4. Divide the dough into two equal portions and roll each into ovals approximately 1/4-inch thick.
  5. Preheat your oven to 450°F (232°C) and prepare a baking sheet by lining it with parchment paper.
  6. Place the unbaked flatbreads on the prepared baking sheet and bake for 6–8 minutes until they puff and are slightly golden.
  7. Remove the flatbreads from the oven and generously spread whipped cottage cheese over each one.
  8. Add a drizzle of olive oil on top and sprinkle the flatbreads with dried herbs or optional spices.
  9. Put the flatbreads back in the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
  10. Let the flatbreads cool slightly before slicing. They're best enjoyed warm!
