  • 1 can sweet corn rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced

  • 1 lime juiced freshly squeezed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions

Prepare the Ingredients

  • Rinse and drain the black beans and sweet corn thoroughly to remove excess sodium and preserve their flavor.
  • Halve the cherry tomatoes and dice the red bell pepper and red onion. Use a sharp knife for clean cuts and to avoid bruising the vegetables.
  • Dice the avocado carefully, ensuring it's ripe for a creamy texture. Add it last to prevent browning.
  • Chop the fresh cilantro finely to release its aromatic oils, enhancing the flavor of the dish.

Mix the Cowboy Caviar

  • In a large mixing bowl, combine the black beans, sweet corn, halved cherry tomatoes, diced red bell pepper, chopped red onion, and diced avocado.
  • In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and black pepper until well combined. This dressing will add a zesty flavor to the caviar.
  • Pour the dressing over the mixed ingredients in the large bowl and gently toss everything together using a spatula. Be careful not to mash the avocado.

Serve and Enjoy

  • Transfer the Cowboy Caviar to a serving bowl. It can be served immediately or chilled in the refrigerator for 30 minutes to allow the flavors to meld.
