How to Make Cowboy Queso
  1. In a skillet over medium heat, sauté the finely chopped onions and diced jalapeños for about 3-4 minutes, until they become fragrant and the onions turn translucent.
  2. Add the cooked ground beef into the skillet and mix well with the sautéed veggies. Let this cook together for an additional 2 minutes to meld the flavors.
  3. In a separate saucepan, combine the diced Velveeta and shredded sharp cheddar cheese over low heat. Stir gently until the cheeses melt and become smooth, about 5-7 minutes.
  4. Stir in the beef mixture along with the can of fire-roasted diced tomatoes and garlic powder. Combine thoroughly and let the mixture warm for 2-3 minutes.
  5. Taste your delightful Cowboy Queso and adjust the seasoning if needed. Serve it hot with crispy tortilla chips.
