How to Make Cowboy Queso
- In a skillet over medium heat, sauté the finely chopped onions and diced jalapeños for about 3-4 minutes, until they become fragrant and the onions turn translucent.
- Add the cooked ground beef into the skillet and mix well with the sautéed veggies. Let this cook together for an additional 2 minutes to meld the flavors.
- In a separate saucepan, combine the diced Velveeta and shredded sharp cheddar cheese over low heat. Stir gently until the cheeses melt and become smooth, about 5-7 minutes.
- Stir in the beef mixture along with the can of fire-roasted diced tomatoes and garlic powder. Combine thoroughly and let the mixture warm for 2-3 minutes.
- Taste your delightful Cowboy Queso and adjust the seasoning if needed. Serve it hot with crispy tortilla chips.
