- In a large skillet, heat olive oil over medium heat. Add fresh spinach and minced garlic, cooking until the spinach wilts beautifully, about 3-4 minutes.
- Gently add the cooked potato gnocchi to the skillet, stirring to mix with the spinach and garlic. Cook for an additional 2-3 minutes until the gnocchi are heated through.
- Slowly add heavy cream, stirring continuously. Let it simmer for 5 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
- Crumble feta cheese into the mixture, stirring until it’s melted and well incorporated.
- Add salt and freshly ground black pepper according to your preference. If you like a bit of heat, sprinkle in some red pepper flakes.
- Remove from heat, and serve immediately. Optional: Top with freshly grated Parmesan cheese for an extra cheesy finish.
