Ingredients
  

For the Beef Filling
  • 1 lb Ground beef
  • 1 packet Taco seasoning
  • 1/2 cup Water
  • 2 cloves Garlic minced
  • 1 Tbsp Lime juice freshly squeezed
  • 1/2 cup Diced green chiles

For the Tacos
  • 2 cups Colby Jack cheese shredded, reserve some for topping
  • 12 small Corn tortillas
For the Creamy Chipotle Sauce
  • 1 cup Mexican crema or sour cream
  • 2 Tbsp Chipotle peppers in adobo sauce
  • 1 Tbsp Honey or sugar
  • 1 Tbsp Lime juice splash
  • 1 clove Garlic for crema, minced
  • to taste Salt
For Serving
  • 1 cup Sour cream for topping
  • 1 cup Shredded lettuce for topping
  • 1/2 cup Fresh cilantro for garnish
  • 1 cup Pico de gallo for topping
  • 1 cup Guacamole for topping
  • 1/2 cup Pickled red onions for topping

Method
 

Preparation Steps
  1. Preheat the oven to 425°F. Line 2 baking sheets with nonstick spray or lightly oil them to ensure your tacos come out perfectly crispy.
  2. Cook the beef in a skillet over medium heat with 1 Tbsp. oil until no longer pink, about 5-7 minutes. Drain excess fat for a lean filling.
  3. Mix in the taco seasoning, water, minced garlic, lime juice, diced green chiles, salt, and pepper. Cook, stirring occasionally, until most moisture evaporates (about 5 minutes).
  4. Combine 1 cup of shredded cheese into the beef mixture and stir until fully mixed. Remove from heat and let cool slightly.
  5. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 45-60 seconds. Flip them halfway to achieve pliability.
  6. Fill each tortilla with about ¼ cup of the beef mixture, adding a sprinkle of cheese on top. Fold over to seal, then lightly brush with oil for extra crispness.
  7. Bake the tacos on prepared sheets for 15-20 minutes, or until they are golden brown and crispy, filling your kitchen with tantalizing aromas.
  8. Prepare the creamy chipotle sauce by blending all crema ingredients in a food processor until smooth. Taste and adjust seasoning as needed for perfection.
