Ingredients

For the Salad

  • 2 cups watermelon diced into bite-sized cubes
  • 1 large cucumber peeled and diced
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves roughly chopped

For the Dressing

  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon honey optional for sweetness
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Instructions

Prepare the Salad

  • In a large mixing bowl, combine the diced watermelon and cucumber. The sweetness of the watermelon pairs perfectly with the crispness of the cucumber, creating a refreshing base for the salad.
  • Add the crumbled feta cheese and chopped mint leaves to the bowl. The feta adds a salty creaminess, while the mint provides a fresh aroma and flavor.

Make the Dressing

  • In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and black pepper. Whisking emulsifies the dressing, ensuring all ingredients are well combined and evenly distributed.
  • Taste the dressing and adjust seasoning if necessary. You may want to add more lime juice for acidity or honey for sweetness, depending on your preference.

Combine and Serve

  • Pour the dressing over the salad mixture and gently toss to combine. Be careful not to crush the watermelon or feta while mixing.
  • Transfer the salad to a serving bowl and garnish with additional mint leaves if desired. Serve immediately for the best flavor and texture.

Notes

This salad is best served fresh, but can be stored in the refrigerator for up to 2 hours before serving. If making ahead, keep the dressing separate until just before serving to prevent the salad from becoming soggy.
