Ingredients

For the Chicken

  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon salt to season the chicken
  • 1 teaspoon black pepper freshly ground

For the Sauce

  • 4 cloves garlic minced
  • 1 cup chicken broth low sodium recommended
  • 1 cup heavy cream for creaminess
  • 1 cup grated Parmesan cheese plus extra for serving
  • 1 teaspoon dried Italian herbs or Italian seasoning
  • 1 teaspoon red pepper flakes optional, for heat

For the Pasta

  • 8 ounces penne pasta or your favorite pasta shape
  • 1 cup fresh spinach optional, for added nutrition

Instructions

Prepare the Chicken

  • Cut the chicken breasts into bite-sized pieces and season with salt and black pepper. This helps to enhance the flavor of the chicken.
  • Place the seasoned chicken in the bottom of the crockpot.

Make the Sauce

  • In a mixing bowl, combine minced garlic, chicken broth, heavy cream, grated Parmesan cheese, dried Italian herbs, and red pepper flakes (if using). Stir well to combine all ingredients.
  • Pour the sauce mixture over the chicken in the crockpot, ensuring the chicken is well coated.

Cook the Dish

  • Cover the crockpot and cook on low for 4 hours or on high for 2 hours. Cooking on low allows the flavors to meld beautifully.
  • After the cooking time is complete, check the chicken for doneness. It should be tender and easily shredded.

Prepare the Pasta

  • About 15 minutes before serving, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • If using spinach, add it to the crockpot during the last 10 minutes of cooking to wilt it.

Combine and Serve

  • Once the chicken is cooked, shred it in the crockpot using two forks and stir to combine with the sauce.
  • Add the cooked pasta to the crockpot and stir until the pasta is well coated with the sauce.
  • Serve hot, garnished with additional grated Parmesan cheese and fresh herbs if desired.

Notes

For best results, avoid lifting the lid of the crockpot during cooking to maintain temperature and moisture. This dish can be made ahead and reheated, making it perfect for meal prep.
