How to Make Gluten-Free Pumpkin Donuts
  1. Preheat your oven to 350°F (175°C) and grease a donut pan thoroughly.
  2. Mix together the melted coconut oil and granulated sugar in a large bowl until well combined.
  3. Add the room temperature eggs and pumpkin purée into the mixture, and mix well.
  4. Whisk together the dry ingredients separately: pumpkin pie spice, ground cinnamon, baking flour, salt, and baking powder.
  5. Combine the dry ingredients with the wet mixture, stirring gently until just combined.
  6. Fill the donut pan with the batter, ensuring each mold is about ¾ full.
  7. Bake for about 16 minutes, or until a toothpick inserted into a donut comes out clean.
  8. Cool the donuts slightly before glazing, then coat the tops with the glaze.
