How to Make Healthy Oatmeal Protein Cookies
- Preheat the oven to 325°F/160°C. Line a large cookie sheet with parchment paper or a silicone baking mat.
- Mash the ripe bananas in a large bowl until very smooth.
- Add the peanut butter, rolled oats, and protein powder to the mashed bananas. Mix well to combine.
- Stir in the chia seeds, melted coconut oil, honey, chocolate chips, raisins, vanilla extract, cinnamon, and salt. Mix everything together until well combined.
- Shape the mixture into 20 cookies and place them on the prepared baking sheet.
- Bake the cookies for about 10-12 minutes, or until they are set and the bottoms start to brown.
- Cool the cookies completely on a wire rack before transferring them to an airtight container.
