How to Make Homemade Italian Sausage
  1. Gather all ingredients on a clean countertop.
  2. Cut the pork shoulder into smaller chunks for easier blending.
  3. Mix in a bowl the minced garlic, oregano, fennel seeds, red pepper flakes, salt, and black pepper until combined.
  4. Place the pork chunks in a large mixing bowl and sprinkle the spice mixture over them. Mix thoroughly.
  5. Shape the mixture into patties or stuff it into casings if preferred.
