- Zest the organic lemons using a microplane or zester, ensuring you only take the yellow part.
- In a clean, airtight jar, mix the lemon zest with the high proof alcohol.
- Every couple of days, give the jar a little shake to help the flavors mingle.
- In a saucepan, heat the water and add the white sugar, stirring until dissolved. Let it cool completely.
- Carefully strain the lemon zest from the infused alcohol using a fine mesh sieve.
- Combine the infused alcohol with the cooled simple syrup and stir well.
