Ingredients

For the Chicken

  • 1 lb boneless, skinless chicken breasts trimmed of excess fat
  • 1 tbsp olive oil for cooking
  • 1 tsp smoked paprika for flavor
  • 1 tsp garlic powder for flavor
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

For the Salad

  • 4 cups mixed salad greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled

For the Hot Honey Dressing

  • 1/4 cup honey preferably local
  • 1 tbsp hot sauce adjust to taste
  • 1 tbsp apple cider vinegar for acidity
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions

Prepare the Chicken

  • Preheat a skillet over medium-high heat. Add the olive oil and allow it to heat for about 1 minute.
  • Season the chicken breasts with smoked paprika, garlic powder, salt, and black pepper on both sides.
  • Place the seasoned chicken breasts in the skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Once cooked, remove the chicken from the skillet and let it rest for 5 minutes before slicing it into strips.

Make the Hot Honey Dressing

  • In a small bowl, whisk together the honey, hot sauce, apple cider vinegar, salt, and black pepper until well combined.
  • Taste the dressing and adjust the hot sauce if you prefer more heat.

Assemble the Salad

  • In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  • Add the sliced chicken on top of the salad mixture.
  • Drizzle the hot honey dressing over the salad and toss gently to combine all ingredients evenly.

Serve

  • Divide the salad among serving plates and serve immediately, garnished with additional hot honey if desired.

Notes

This salad is best served fresh. You can adjust the level of heat in the dressing by varying the amount of hot sauce used.
