Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  3. Beat in the egg one at a time, then mix in the Irish whiskey until well combined.
  4. Whisk together the flour, instant coffee granules, baking soda, and salt in another bowl. Gradually add the dry mixture to the wet ingredients.
  5. Scoop rounded balls of dough onto the prepared baking sheets, spaced about two inches apart.
  6. Bake for 10-12 minutes until the edges are golden brown but centers remain soft. Cool on wire racks before serving.
