Ingredients

For the Popsicle Mixture

  • 1/2 cup fresh key lime juice about 4-6 key limes, juiced
  • 1 can coconut milk full-fat for creaminess
  • 1/4 cup honey or agave syrup for a vegan option
  • 1/4 cup granulated sugar adjust to taste
  • 1/2 teaspoon vanilla extract for added flavor
  • 1/4 teaspoon salt to balance the sweetness

For Garnish (optional)

  • 1 tablespoon lime zest for a burst of flavor
  • 1 tablespoon shredded coconut unsweetened, for texture

Instructions

Prepare the Popsicle Mixture

  • In a blender, combine the fresh key lime juice, coconut milk, honey, granulated sugar, vanilla extract, and salt. Blend on high until the mixture is smooth and well combined. This ensures that all ingredients are evenly distributed.
  • Taste the mixture and adjust sweetness if necessary by adding more honey or sugar. Remember that freezing can dull sweetness, so it should taste slightly sweeter than desired.

Fill the Molds

  • Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing.
  • If desired, sprinkle a little lime zest and shredded coconut on top of each mold for added flavor and texture.

Freeze the Popsicles

  • Insert the popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 hours, or until completely solid. This step is crucial for achieving the right texture.

Unmold and Serve

  • To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This will help loosen them.
  • Gently pull on the popsicle sticks to release the popsicles. Serve immediately or store in a sealed container in the freezer for up to 2 weeks.

Notes

For a creamier texture, you can substitute half of the coconut milk with Greek yogurt. Ensure that the popsicles are fully frozen before attempting to remove them from the molds to prevent breaking.
