  • 1 cup Vegetable broth
  • 1 teaspoon Italian seasoning

  • 1 cup Kale or spinach sliced
  • 1/2 cup Cashew cream
  • 1/4 cup Vegan parmesan shredded
  • 1/4 cup Fresh basil chopped
  • 1 tablespoon Lemon juice

How to Make Marry Me Butter Beans
  1. Heat olive oil or vegan butter in a pan over medium heat.
  2. Sauté the diced shallots or small onion until translucent for about 3-4 minutes.
  3. Stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add paprika, chopped sundried tomatoes, and tomato paste; cook for another 2 minutes.
  5. Pour in the vegetable broth and stir well.
  6. Mix in the Italian seasoning and butter beans; combine gently.
  7. Fold in the sliced kale or spinach and cook until wilted, about 2-3 minutes.
  8. Stir in the cashew cream and cook until heated through, about 3 minutes.
  9. Remove from heat and mix in shredded vegan parmesan, chopped basil, and lemon juice.
