1cupGreek yogurtplain or vanilla for added sweetness
For the Optional Garnish
1tablespoonChopped mintfor garnish
Instructions
Prepare the Berry Mixture
In a blender, combine the strawberries, blueberries, raspberries, and honey. Blend until smooth. This step ensures that the berries are well mixed and the honey is evenly distributed throughout the mixture.
Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup. This allows you to customize the sweetness to your preference.
Add the Greek yogurt to the berry mixture and blend again until fully incorporated. This adds creaminess to the popsicles and balances the tartness of the berries.
Fill the Popsicle Molds
Pour the berry and yogurt mixture into popsicle molds, filling each mold about 3/4 full. This leaves space for the mixture to expand as it freezes.
Insert wooden sticks into the center of each mold. This will serve as the handle for the popsicles.
If desired, sprinkle some chopped mint on top of the mixture in each mold for added flavor and a pop of color.
Freeze the Popsicles
Place the filled molds in the freezer and freeze for at least 4 hours, or until completely solid. Freezing for this duration ensures that the popsicles are firm and easy to remove from the molds.
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This helps loosen the popsicles for easy removal.
Serve and Enjoy
Serve the popsicles immediately after removing them from the molds. Enjoy the refreshing taste of mixed berries on a hot day!
Notes
For a creamier texture, you can substitute half of the Greek yogurt with coconut milk or almond milk. If using frozen berries, there's no need to thaw them before blending.
