How to Make Monterey Chicken Spaghetti
- Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
- In a large skillet, add olive oil and butter over medium heat. Allow them to melt.
- Add the onion, garlic, and bell peppers to the skillet. Sauté until softened and fragrant, about 3-5 minutes.
- Stir in the cooked chicken, heavy cream, and chicken broth. Mix well and cook for 2-3 minutes to thicken the sauce slightly.
- Add the cooked spaghetti to the skillet, tossing it gently to combine with the sauce and ingredients.
- Stir in the Monterey Jack cheese until it's completely melted and the sauce becomes creamy.
- Taste and season with salt and pepper to your liking.
- Before serving, sprinkle with fresh parsley for a touch of color.
