Instructions
  1. In a large bowl, combine the quick oats, nut butter, maple syrup, chia seeds, protein powder, vanilla extract, and sea salt. Stir gently until well blended and thick.
  2. Grab your silicone mini muffin tin. If it’s not silicone, lightly grease it with cooking spray.
  3. Scoop the mixture into the prepared tin, filling each cup about 2/3 full. Press down slightly to ensure they're well packed.
  4. In a small bowl, combine the chocolate chips and coconut oil. Heat in the microwave in 30-second increments, stirring until fully melted.
  5. Divide the melted chocolate evenly among the filled cups to create a luscious topping.
  6. Place the tray in the freezer for at least 2-3 hours. Once firm, gently remove from the mold and store in an airtight container.
