Instructions
  1. In a large pot over medium heat, brown the ground beef or turkey for about 5-7 minutes, draining any excess fat.
  2. Add the chopped onion and bell peppers to the pot, sautéing until softened, about 3-4 minutes.
  3. Stir in the taco seasoning, cooking for another minute to awaken the flavors.
  4. Add the uncooked pasta, diced tomatoes (with juice), and low-sodium chicken broth. Bring to a boil, then reduce heat and cover for 10-12 minutes, cooking until the pasta is al dente.
  5. Gently stir in the shredded cheddar cheese until melted and creamy. Serve hot, optionally topping with fresh cilantro and lime juice.
