  • 1/2 cup Extra-virgin olive oil adds moisture
  • 2 cups All-purpose flour
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Ground cardamom
  • 1 cup Granulated sugar plus extra for topping
  • 3 large Eggs
  • 1/2 cup Fresh orange juice
  • 1 cup Whole milk or plant-based alternative
For the Garnish
  • 1 cup Sifted confectioners' sugar for dusting
  • Zest of 1 orange Additional zest for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F. Make sure the rack is positioned in the center.
  2. Prepare your cake pan by brushing with olive oil, lining with parchment paper, and dusting with flour.
  3. Whisk together the flour, kosher salt, baking powder, and baking soda in a medium bowl.
  4. Combine sugar, cardamom, and eggs in a large bowl. Beat until thick and fluffy, about 5 minutes.
  5. Slowly drizzle in the olive oil while mixing.
  6. Add half of the orange zest, orange juice, and whole milk. Beat until smooth.
  7. Mix the dry ingredient mixture into the wet ingredients on low until a uniform batter forms.
  8. Pour the batter into the prepared pan and sprinkle the top with remaining sugar.
  9. Bake for 40 to 45 minutes or until a skewer inserted in the center comes out clean.
  10. Cool the cake in the pan for 30 minutes, then carefully invert it onto a plate to cool completely.
  11. Dust the cooled cake with sifted confectioners’ sugar and sprinkle fresh zest on top before serving.
