Preparation
- Preheat the oven to 350°F. Make sure the rack is positioned in the center.
- Prepare your cake pan by brushing with olive oil, lining with parchment paper, and dusting with flour.
- Whisk together the flour, kosher salt, baking powder, and baking soda in a medium bowl.
- Combine sugar, cardamom, and eggs in a large bowl. Beat until thick and fluffy, about 5 minutes.
- Slowly drizzle in the olive oil while mixing.
- Add half of the orange zest, orange juice, and whole milk. Beat until smooth.
- Mix the dry ingredient mixture into the wet ingredients on low until a uniform batter forms.
- Pour the batter into the prepared pan and sprinkle the top with remaining sugar.
- Bake for 40 to 45 minutes or until a skewer inserted in the center comes out clean.
- Cool the cake in the pan for 30 minutes, then carefully invert it onto a plate to cool completely.
- Dust the cooled cake with sifted confectioners’ sugar and sprinkle fresh zest on top before serving.
