Ingredients
  

Peanut Butter Mixture
  • 1 cup Creamy no stir peanut butter smooth base for flavor
  • 1/2 cup Salted butter melted; use coconut oil for dairy-free
  • 2 cups Powdered sugar sift for a smoother finish
Crunch
  • 3 cups Rice Krispies cereal can use gluten-free version
Coating
  • 2 cups Semi-sweet chocolate chips or chocolate melting wafers for coating

Method
 

  1. Mix together creamy peanut butter and melted butter until smooth.
  2. Gently fold in the Rice Krispies until evenly coated.
  3. Gradually add the powdered sugar and blend until combined.
  4. Switch to a rubber spatula to mix when it's too stiff for the mixer.
  5. Line a baking sheet with parchment paper.
  6. Use a cookie scoop to drop the mixture onto the sheet.
  7. Roll into balls and chill in the fridge for at least 30 minutes.
  8. Melt the chocolate in the microwave until smooth.
  9. Dip each ball into the melted chocolate and place on the baking sheet.
  10. Chill again until chocolate sets.
  11. Store leftovers in an airtight container.

Notes

For best results, use room temperature peanut butter and sift powdered sugar to prevent clumping.
