For the Chicken Marinade
  • 4 pieces Boneless, skinless chicken breasts choose fresh for juiciness
  • 3 cloves Fresh garlic minced for aroma
  • 1/4 cup Low-sodium soy sauce
  • 1/4 cup Freshly squeezed lime juice
  • 1/4 cup Fresh cilantro leaves chopped
For the Rice
  • 1 cup Long-grain jasmine rice fluffy texture
  • 2 cups Low-sodium chicken broth
For the Green Sauce
  • 1 large Green bell pepper
  • 1/2 teaspoon Salt to taste

Method
 

Cooking Instructions
  1. Gather ingredients.
  2. In a bowl, whisk together soy sauce, lime juice, minced garlic, and chopped cilantro. Marinate chicken breasts for at least 30 minutes.
  3. Rinse jasmine rice under cold water until clear. Toast rice in a pot over medium heat for 2-3 minutes, then add chicken broth, bring to a boil, cover, and simmer for 15-20 minutes.
  4. Heat oil in a skillet over medium-high heat. Sear marinated chicken breasts for 5 minutes on each side until golden brown.
  5. In a blender, combine cilantro, green bell pepper, garlic, lime juice, and salt. Blend until smooth.
  6. Slice the seared chicken, serve over rice, and drizzle the green sauce on top.
