Preparation Steps
- Gather ingredients. Begin by assembling all the ingredients on your countertop.
- Marinate the chicken. In a mixing bowl, blend together soy sauce, lime juice, minced garlic, and fresh cilantro. Coat the chicken breasts in the marinade and let them soak for at least 30 minutes.
- Prepare the rice. Rinse the jasmine rice under cold water until the water runs clear. In a pot, toast the rice over medium heat for a few minutes. Stir in the chicken broth, bring it to a boil, then cover and simmer for 15–20 minutes until the rice is fluffy and tender.
- Sear the chicken. Heat a drizzle of oil in a skillet over medium-high heat. Sear the marinated chicken for about 5 minutes on each side.
- Make the green sauce. In a blender, combine cilantro, chopped green bell pepper, garlic, lime juice, and salt. Blend until smooth.
- Serve and enjoy. Slice the chicken and serve it over the fluffy rice, then generously drizzle the green sauce on top.
