Instructions
Prepare the Oatmeal
In a medium saucepan, combine the rolled oats and water. Bring to a boil over medium heat, stirring occasionally to prevent sticking.
Once boiling, reduce the heat to low and add the canned pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir well to combine.
Simmer the mixture for about 10-15 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid. If the oatmeal is too thick, you can add a little more water or milk to reach your desired consistency.
Serve and Garnish
Remove the saucepan from heat. Divide the oatmeal into four serving bowls.
Top each bowl with chopped walnuts, a drizzle of maple syrup, and a splash of milk if desired.
Sprinkle with pumpkin seeds for an extra crunch and serve warm.
Notes
