Ingredients

Oatmeal Base

  • 2 cups rolled oats Use old-fashioned oats for best texture.
  • 4 cups water Can substitute with milk for creamier oatmeal.
  • 1 cup canned pumpkin puree Ensure it's pure pumpkin, not pumpkin pie filling.
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 teaspoon cinnamon Freshly ground cinnamon is recommended.
  • 1/2 teaspoon nutmeg Freshly grated nutmeg enhances flavor.
  • 1/4 teaspoon ginger Ground ginger or freshly grated.
  • 1/4 teaspoon salt Enhances the overall flavor.

Toppings

  • 1/4 cup chopped walnuts Can substitute with pecans or almonds.
  • 1/4 cup maple syrup Adjust to taste for sweetness.
  • 1/4 cup milk Optional, for creaminess.
  • 1 tablespoon pumpkin seeds Optional, for garnish.

Instructions

Prepare the Oatmeal

  • In a medium saucepan, combine the rolled oats and water. Bring to a boil over medium heat, stirring occasionally to prevent sticking.
  • Once boiling, reduce the heat to low and add the canned pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir well to combine.
  • Simmer the mixture for about 10-15 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid. If the oatmeal is too thick, you can add a little more water or milk to reach your desired consistency.

Serve and Garnish

  • Remove the saucepan from heat. Divide the oatmeal into four serving bowls.
  • Top each bowl with chopped walnuts, a drizzle of maple syrup, and a splash of milk if desired.
  • Sprinkle with pumpkin seeds for an extra crunch and serve warm.

Notes

This pumpkin oatmeal is perfect for a cozy breakfast and can be made ahead of time. Simply reheat with a splash of water or milk before serving.
