How to Make Red Velvet Cookies
- Preheat your oven to 350°F and line two baking sheets with a silicone baking mat or parchment paper.
- Mix the butter, cream cheese, both sugars, baking soda, salt, and vanilla extract in a stand mixer bowl. Blend on medium speed until creamy and uniform.
- Incorporate the egg and egg yolk, mixing in the red food coloring on low speed.
- Combine the dry ingredients, mixing on low until just absorbed.
- Add 1 1/2 cups of the baking chips to the dough, mixing until evenly distributed.
- Shape the cookie dough into 1-inch balls and place on the prepared baking sheet.
- Bake for 11 to 13 minutes until the edges are dry.
- Top warm cookies with reserved white chips and let cool for 5 minutes before transferring to a cooling rack.
