How to Make Rice Pudding
- Rinse the Arborio rice under cold water to remove excess starch.
- In a medium saucepan over medium heat, mix the rinsed rice, whole milk, sugar, salt, and cinnamon stick. Stir until it reaches a gentle boil.
- Reduce heat to low, cover, and let it simmer for 25-30 minutes, stirring frequently.
- Remove from heat and stir in vanilla extract. Discard the cinnamon stick.
- Transfer to serving dishes and cool at room temperature before refrigerating for at least two hours.
- Serve either chilled or warm, topped with a sprinkle of ground nutmeg.
