Method
 

How to Make Rice Pudding
  1. Rinse the Arborio rice under cold water to remove excess starch.
  2. In a medium saucepan over medium heat, mix the rinsed rice, whole milk, sugar, salt, and cinnamon stick. Stir until it reaches a gentle boil.
  3. Reduce heat to low, cover, and let it simmer for 25-30 minutes, stirring frequently.
  4. Remove from heat and stir in vanilla extract. Discard the cinnamon stick.
  5. Transfer to serving dishes and cool at room temperature before refrigerating for at least two hours.
  6. Serve either chilled or warm, topped with a sprinkle of ground nutmeg.
