Ingredients
  

For the Rice Layer
  • 2 cups cooked sushi rice
  • 2 tablespoons low-sodium soy sauce can use tamari for gluten-free
For the Salmon Mixture
  • 1 pound skinless fresh salmon fillets or canned salmon as substitute
  • 8 ounces cream cheese or sour cream for a tangy twist
  • 4 tablespoons chopped green onions or scallions
For the Topping
  • 1 cup panko breadcrumbs or crushed crackers
  • n/a n/a nori (seaweed) for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and coat your baking dish with nonstick spray.
  2. Combine the cooked sushi rice with 2 tablespoons of low-sodium soy sauce in a bowl and spread evenly in the baking dish.
  3. Mix the cream cheese, remaining 2 tablespoons of soy sauce, chopped green onions, and salmon in another bowl until well combined.
  4. Spread the salmon mixture over the rice layer evenly.
  5. Top with panko breadcrumbs evenly.
  6. Bake for 25-30 minutes until the top is golden brown and fragrant. Let cool slightly before serving.
  7. Optional: Garnish with nori and serve with a drizzle of sriracha or spicy mayo if desired.
