Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts
  • to taste salt
  • to taste pepper
For the Flavor Base
  • 3 cloves fresh garlic, minced
  • 2 tbsp extra-virgin olive oil
  • 2 tsp dried oregano
  • 2 tbsp fresh lemon juice
For the Sauce
  • 1 can (14.5 oz) diced tomatoes, with no added sugar or salt
For the Topping
  • 4 oz crumbled feta cheese

Method
 

Directions
  1. Pat chicken breasts dry to remove moisture and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. In your slow cooker, layer the seasoned chicken breasts. Top with sautéed garlic, dried oregano, lemon juice, diced tomatoes, and crumbled feta cheese.
  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, use two forks to shred the chicken in the slow cooker, mixing everything thoroughly.
  6. Serve drizzled with extra olive oil or a splash of lemon juice, and garnish with more feta if desired.
