- Pat chicken breasts dry to remove moisture and season generously with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- In your slow cooker, layer the seasoned chicken breasts. Top with sautéed garlic, dried oregano, lemon juice, diced tomatoes, and crumbled feta cheese.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, use two forks to shred the chicken in the slow cooker, mixing everything thoroughly.
- Serve drizzled with extra olive oil or a splash of lemon juice, and garnish with more feta if desired.
